  2. 500 g Harina 0000

  1. En primer lugar debemos cocinar la calabaza, preferentemente al horno (para que no absorba tanta agua) con un poquito de aceite de oliva, para luego hacer un puré
  2. Debemos activar la levadura, para ello realizaremos la famosa esponja.
    Para hacerlo, tomamos 100cc de leche y la entibiamos (No caliente) luego agregamos la levadura triturada, la cucharada de azúcar y 2 cucharadas de harina. Revolvemos y dejamos reposar hasta que se active.

  3. En un recipiente incorporamos la harina y la leche en polvo mezclada, realizamos un huequito en el centro
    Recuerden salar hacia los costados por fuera del hueco ya que la sal directa con la levadura hará que corte el leudado.

  4. Amasamos hasta tener una masa suave y lisa (10 min aprox)
  5. Tapamos la masa y la dejamos reposar unos 30 minutos o hasta que duplique su tamaño
  6. Una vez que la masa duplico su tamaño, debemos des-gasificarla, para realizarlo solo debemos aplastarla con las manos para sacarle el gas generado con el leudado.
    Repetir este paso al menos 2 o 3 veces. Realizar el desgasificado nos ayudará a que el pan quede más esponjoso.
  7. Una vez que des-gasificamos la masa 2 o 3 veces enrollamos la masa y la introducimos en un molde. Yo utilicé una budinera de teflón. (si no es de teflón enmantecar y enharinar el molde antes de introducir la masa para que no se pegue)
  8. Dejamos reposar la masa en el molde al menos 1 hora o hasta que duplique su tamaño.
    Luego introducir el pan en un horno moderado por 20 o 25 minutos (o hasta que al introducir un cuchillo este salga seco).
  9. Y a Comer!
